18cm. round cake will give you 6 Party size slices.
- 160gr. of dark chocolate
- 150ml of olive oil 250
- 200gr. of sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 80gr. of white flour
Melt the dark chocolate for 2 minutes in the microwave or on a very low heat stove. After that, add the olive oil to the melted chocolate bowl and mix until it all looks the same.
Beat the eggs, sugar and vanilla on high speed in a mixer until the mixture is puffy and light. The chocolate and oil should be folded in to the puffy mixture of the beaten eggs and then put in the flour and continue with folding movements with a spatula until a homogenous texture is obtained Oil the pan with olive oil and pour the mixture into it. Bake at 160 degrees for about 40 minutes.
The cake is delicious after it has a chance to sit in the refrigerator.
