Heart cookies

Heart cookies (30-60 cookies).

Sugar and egg in the bowl whip [high speed 1 to 10 on scale number 6 or 8] until you get a mousse. Add vanilla and continue to whip. Add olive oil and continue to whip. Slow down the speed control to number 3 or 4. Add the flour g r a d u a l l y This is a critical step. Mix the dough and add flour until the dough comes off the bowl. You have to get a very smooth and supple dough.

Pay attention - there are lots of sorts of flour. You may use more or less than 300gr. Keep an eye on therefore.

Preheat the oven to 180 degrees

Cut the dough with a clean knife into two parts. Lightly flour the surface and the rolling pin. Roll out one part of the dough and make hearts :-) Put onto a form with baking paper. The same with the second part of the dough.

Insert the form to the oven in the third rack [the bottom is the first] and set a timer to 20 à 30 minutes. Depends on the oven and of your liking. Brown or light brown.
